Egg quality can be defined by internal quality and external quality. Internal quality is focused on egg white (or albumen) cleanliness and viscosity, size of the air sac, yolk shape and yolk strength. Almost internal features could be checked with destructive method. External quality refers to shell cleanliness, texture and shape, and so on.
